Aloo Patties..





Ingredients:
. Potato(cooked and mashed) - 1 cup
. Jeera powder- 1 tbsp
. Onions sliced - 1/2 cup
. 1 green chilli
. Salt
. Coriander powder - 1/2 tbsp
. lemon juice - 2 tbsp
. Chilli powder - 1tbsp


Method:
1) Heat oil in a pan.Add onions,sliced green chilli and fry for some time.
2) Add mashed aloo, salt, jeera powder, coriander powder,chilli powder and mix well.
3) Add lemon juice and switch off the stove.
4) Divide this portion in to equal small bolls.
5) Taking one at a time, gently flatten each ball into a round patty.
6) Heat 1 tsp. oil in a non-stick pan over a low heat. Pan-fry these tikki's both sides till crisp golden brown, adding oil if required, on a very low heat.


Hot hot Aloo Patties are ready to serve..

Garam masala..



Ingredients:
. 4 tablespoon coriander seeds
. 4 tablespoon cumin seeds
. 2 tablespoon black pepper corns
. 1 tablespoon cloves
. 6 large black cardamom
. 5 green cardamom pods
. 2  cinnamon sticks
. 3-4 dried bay leaves




Method:
1) Heat pan and carefully dry roast all of the above ingredients on low flame. Stir once in a while.
2) Once the spices are roasted, turn off the flame and let it cool.
3) Once cooled, grind them all together to a fine powder in a clean, dry coffee grinder.
4) Store in an air-tight container in your pantry and use as needed.

Palli patti or Peanut chikki..




Ingredients:
Ground Nuts or Peanuts – 1 cup
Grated Jaggery – 1/2 cup
Powdered Sugar – 1/2 cup
Water – 1/4 cup


Method:
1) Roast the peanuts and remove their skins.
2) Take a square tin and an aluminum foil of the tin size. Apply ghee or oil inside the tin all over and place the aluminum foil in the base of the cake tin. Apply ghee or oil on the aluminum foil also and keep this aside.
3) Take water in a plate and keep it near the stove.
4) Heat a pan on low flame and add water to it. Add grated jaggery to the water and mix.
5) Heat another pan on medium heat and add powdered sugar to it and keep on stirring it. 
6) After some time observe that the jaggery is boiling. Stir the jaggery mixture in between and cook on low flame only. Meanwhile observe that the powdered sugar has also started melting. 
7) Lower the heat of the pan in which we are caramelizing the sugar. Allow the powdered sugar to melt till it caramelizes and changes to a nice golden brown color. Once it attains golden brown color remove from heat. At this stage drop some caramelized syrup in cold water and see that it crystallizes immediately. The syrup dropped in water becomes hard. 
8) Drop some jaggery syrup in cold water and see that it has reached soft ball consistency.
9) Add the caramelized sugar in the jaggery syrup and immediately add the roasted peanuts. Mix all well till nuts are coated with the syrup mixture. Pour this mixture in the prepared cake tin and spread it evenly.
10) Let it cool for 3 to 4 minutes and mark it with a flat ladle or a knife while still warm. Once the mixture cools, it hardens. So mark the chikki while the mixture is still warm. 
11) When the mixture has completely cooled down, turn it on to a plate. Remove the aluminum foil and break it along the marks to get nice square pieces of chikki.

Methi Rice..




Ingredients:
. Rice 2 cups
. Water 4 cups
. Ilachi 4 no's
. Lavang 4 no's
. Cinnamon
. Ginger garlic paste 1 spoon
. Mirchi 4 no's(slit in between)
. Onions 1 no's(chopped)
. Tomato's 2 no's(chopped)
. Chopped Methi leaves 1/2 cup
. oil 4 tbsps
. salt to taste


Method:
1) Soak rice for 1/2 hr(for uniform boiling of rice).
2) Heat oil in bottomed pan and add chopped onions, chilly's, methi leaves, ginger garlic paste,ilachi,lavang,cinnamon and fry for some time.Add tomatoes and cook for 5 more mins.
3) Now add soaked rice and fry for some time and then add water along with salt and cook the rice until done. This dish can be prepared in pressure cooker also.


Yummy dish with nice aroma is ready to serve...

Vegetable Burger..



Ingredients:
. Burger Buns - 4no's
. Potato(cooked and mashed) - 1 cup

. Chilli powder - 1tbsp

For the filling
a few cucumber slices
tomatoes slices
lettuce leaves
tomato ketchup 
onion slice
cheese slice

Method:

Veg cutlet:
1) Heat oil in a pan.Add onions,sliced green chilli and fry for some time.
2) Add mashed aloo, salt, jeera powder, coriander powder and mix well.
3) Add lemon juice and switch off the stove.
4) Divide this portion in to equal small bolls.
5) Taking one at a time, gently flatten each ball into a round patty.
6) Heat 1 tsp. oil in a non-stick pan over a low heat. Pan-fry these tikki's both sides till crisp golden brown, adding oil if required, on a very low heat.


Serving the Burger
1)Cut each bun horizontally into two.
2) Spread a little tomato ketchup.
3) Place a cheese slice,lettuce leaf and vegetable cutlet and put a few cucumber slices, onion slice, and one tomato slice on top.
4) Cover with the upper half of the bun.
5) Repeat with the remaining buns, cutlets,and filling.


Serve hot with aloo chips...
